Lemon Rosemary Tarts

Today has been a super dreary, gross rainy day and I needed a bit of sunshine. So, naturally, I made Lemon Rosemary Tarts. I found this lovely recipe from Pinterest (my go to source for recipes) and it is absolutely a keeper.




*Recipe*
*for the pastry
1 cup butter
2 and 1/2 cup plain flour
2 tbsp sugar
4 tbsp ice cold water
rub together the butter and flour, then add the sugar and water, by adding two tbsp to start then more if needed. knead the dough until soft and workable and shape into 4 discs and wrap in cling film and put in the fridge for at least 20 minutes. preheat the oven to 350F. grease 4 small tart tins and add pastry and blind bake with some baking beans and cook for 10 minutes.
*for the filling
1/4 cup flour
1/4 cup sugar
juice of 2 lemons
zest of 1 lemon
3 eggs
tsp finely chopped fresh rosemary
In a bowl combine the sugar, lemon juice and zest and add the egg and mix, then sift in the flour and mix well and add the rosemary, then remove from oven and remove the baking beans and place back on the oven shelf and pour in the filling and cook for 15 minutes.
